It really does help when someone gets stuck. Just dig out around the tires a bit, and slam some boards under there. Then use another truck or a winch to assist in getting on the boards, then just drive it out. Make sure you don't spit the board out and hit something/someone, that could be bad.
A recent time when the board really helped:
My buddy got his many thousands of pounds Excursion bottomed out in a feild. The body was resting on the ground in many points. First my friend almost got his truck stuck attempting to pull it out. Then comes the neighbor in his tractor, which ending up just doing wheelies the whole time. So I run to get some boards and a shovel, and start the dig. I dug just to where the bottom of the tires could be seen, and shoved some boards up under there with a couple of short logs underneath. Also, it really helps (well at least to me) to pull out in reverse. You can see the truck you are pulling and can always put it in drive and get out if you are getting yourself bogged down. But back to the excursion, I just did a couple quick yanks and got it up on the boards, and my buddy drove it right out. Boards also can be substituted with logs if those are more available.
